    Let us start by listing out the ingredients we need to make American pancakes

    Eggs – We see that most recipes have eggs as an integral ingredient. The reason is simple. Eggs act as a moistening agent and a binding agent. They help the flour to bind with all the other ingredients and become dough. For our pancakes, we will need one egg.

    Salt and Sugar – The secret to any pancake is the balance of flavors. For this pancake, all you need is two and a half tablespoons of sugar and a pinch of salt. This will help balance out the recipe.

    Now let us start making the pancakes. We have six easy steps to make these delicious treats.

    1. Take a food processor and add the beating mechanism. Add your flour, baking powder, salt and sugar and start mixing it.

    2. Next, start by first adding your milk in small quantities followed by your egg. This will ensure you have a nice smooth paste. Keep mixing till all the ingredients are fully combined.

    3. Take a large round pan and heat it up. Add vegetable oil or butter into the pan. This is important to prevent the mixture from sticking to the pan.

    4. Take a small amount (around a third) of the mixture and pour it into your hot pan. Do this carefully and spread it evenly all along the pan. Once one side of the pancake is golden in color, flip it with a spatula.

    5. You will have to do this till you get a nice even color on both sides.

    6. Finally, remove the pancake, add syrup or fruits to it, and enjoy.

    Famous Ghanaian Poet, President Kenyatta’s Nephew And His Fiance Among 59 Killed At Mall

    A famous Ghanaian poet and President Kenyatta’s nephew and his son are among the 59 people that were killed at yesterday’s attack that took place at the Westgate mall.

    The Ghanaian poet and diplomat, Kofi Awoonor, was in Nairobi as one of the participant in the Storymoja Hay Festival, a 4-day celebration of writing, thinking and storytelling. The confirmation of his death was made early Sunday morning by the Ghanaian government.

    Other people that have been identified to have been killed in the attack are President Kenyatta’s nephew,  Mbugua and his fiance Wahito who were also at the mall.
    Apart from those who lost their lives at the brutal murder, others were left with injuries. At the moment, about 1,000 people have so far been evacuated from the mall, however, an unknown number of hostages are still trapped inside with the terrorists. I is believed that about 15 people are still at the mercy of the terrorists. Kenyan security forces have been locked in a standoff with gunmen since yesterday. Gun shots have been heard all morning in the area.

    Heavily armed Islamic extremists pulled up in several cars yesterday and shot their way into the most upmarket shopping centre in Nairobi. They ordered Muslims to leave the premises. To be prove they were muslims, they were asked recite a prayer or answer a question on Islam. Once the Muslims were identified and sent out of the complex, they went on shooting rampage killing those that  failed their Islamic test.

    According to a BBC report, at least one of the attackers was a woman with some kind of a leadership role.

    Nigerian midfielder,  John Mikel Obi made history today when he scored his first Premier League goal as Chelsea, his club beat Fulham 2-0 in the west London derby at Stamford Bridge.

    Mikel has played about 185 Premiere League but has never scored a goal. Since joining Chelsea, he has only scored 2 goals for the club. And the last time he did that was in January 2007. This was in the FA Cup and  it was during Jose Mourinho’s first reign as manager.

    “They have been killing me about it — going to the national team and scoring but not here,” Mikel said. “I’m sure the guys will give me a lot of stick.”

    Speaking further about their victory, Mikel Obi said, “We know our fans have been disappointed about a few performances going into these games so we wanted to give them something to cheer.”

    •Former Mozambican President Joaquim Chissano says scramble for Africa “has never been good.”

     This Friday on Al Jazeera’s talk show South2North, Redi Tlhabi debates the new scramble for Africa,

    “It’s not long ago that Africa was perceived as a continent of famine and war. Now it’s being hailed as the answer to the world’s food shortages,” says Redi Tlhabi at the start of the show, which is broadcast from Johannesburg. “Escalating energy and food prices have triggered a global scramble for Africa’s land and water resources. Eager to feed their growing populations, countries are buying up prime farmland in Africa at rock-bottom prices. Land eight times the size of the United Kingdom has already been bought up. Many see the investments as a great opportunity for Africa. Others call it a tragedy, saying local populations lose their livelihoods to make space for new land-owners.”

    Tlhabi is joined by former Mozambican President Joaquim Chissano; Nigerian politician and Oxfam trustee Nkoyo Toyo; and Philippe Heilberg, a land investor from the United States.

    Chissano says, “The scramble for Africa has never been good… But investment is welcomed if it is done in a win-win situation where the people benefit from this investment.”

    Toyo adds, “We hear that at least 33 million square hectares of land… have been acquired in just less than 10 years.”  She says that, with 60% of this land now being cultivated for export, these investments “are increasingly not addressing the needs of the continent.”

    Heilberg argues that the statistics from the UN are highly distorted; he says that his own figures have been doubled in some accounts. While he admits that there have been some clear land grabs, he believes that in those African countries with small populations and large territories there can be win-win situations.

    “Land is cheap in Africa, but there are many reasons why it’s cheap,” he says. “In many parts of the continent there is little to no infrastructure whatsoever… The frontier markets offer incredible risk-reward opportunities if you’re willing to take that risk, because when the growth happens it’s exponential.  I like situations like that.“

    He particularly targets post-conflict countries. “When they come out of conflict, they need investment; they need to build. And to me, those opportunities are phenomenal.”

    Toyo warns that much of the new scramble for Africa has not benefited the local population.  “We are seeing incidences of violence; we are seeing incidences of forced evictions; we are seeing incidences of homelessness, farm lands being taken away…”

    She says one of the challenges is that many of the victims are not involved in the sale process in any way. “Most of the grabs that are going on, the owners don’t even know about them, so there isn’t even a basis for that conversation to happen. The negotiations are happening sometimes with powerful people in secret negotiations. These non-transparent processes are depriving people down the line.”

    She calls for the The World Bank to pause its funding of land deals in Africa until governments have put the framework, rules, regulations and principles in place to guide these kinds of investments. “We are saying to them, ‘You need to put a moratorium on this whole process,’” she says.  

    Chissano says the governments have a key role to play. “The government is very much responsible,” he says. “They have to do their best to protect the people. In Mozambique, we don’t sell land. In Mozambique, we cannot buy land. We put it like this: ‘The land belongs to the people and it is managed by the state on their behalf.’ The challenge here is how do we make sustainable use of land?”

    He points out that, while Mozambique currently only utilises about 20% of its arable land, “We have to think of the generations to come… We will need this land in 100 years time.”

    He believes that government should put food security for their people first and also negotiate for the processing of food to remain in Africa.

    But Heilberg warns there are limits to how far governments can push investors. “If you make the process onerous – and Africa is already a complicated place to do business – the investors won’t come.”

    As they explore Africa’s transition from hopeless continent to investment darling of the world, the group discusses Africa’s history of food dependency, the role of NGOs on the continent, and the ability of small farm owners to expand their businesses and provide food for the continent.
